The folks at Metro State’s Center for Innovation are all about promoting innovation in entrepreneurship and they know a great new business model when they see one. And right now, they’ve got their eyes on mobile business.  Next Thursday they’ll be hosting an Innovation Day at the Auraria campus and they’ve invited some of our favorite street food vendors down to feed the masses – and educate them, too.  The purpose of the event is to promote business ownership and innovation – and you’re invited!

At 9:15a in the Tivoli Turnhalle, listen to folks from The Denver Cupcake Truck and Biker Jim’s Gourmet Dogs – as well as Mile High Pedicabs – share their experience in rolling out (haha!) a mobile business. But most importantly (to us here at Denver Street Food, anyway!), catch a whole host of vendors from 10a-2pm as they sell their fine food on campus.  They’ll be located between the events center and the ball fields (just past where Larimer dead ends in the middle of campus).

Here’s the latest list of participating vendors that we’ve gotten our eyes on:

In addition to street food and pedicabs, there will be a talk later that morning on Social Entrepreneurship from Rebecca Saltman and another by the team at 2Kool called “Graffiti tagger turned Artrepreneur.” Sounds like a fun and educational day – plus great food!

Check out the Innovation Day website for campus maps, specific times, and parking info. We’ll see you there!
